Triple Chocolate Cookies (Paleo, low carb)

Hi, remember me? Want to know why I’ve been away all semester? I’ve been busy learning  a  lot of things from many people. Here is a list of people  who taught me many important things.

#1: MOST TEACHER’S  ASSISTANTS

Me: My code isn’t compiling. Can you fix it?

TA #1: It’s  because your code isn’t working.

Me: I know, can you fix  it?

TA #1:  Its not working because it’s not compiling.

Me: I know, can you fix it?

TA #1: You see, the computer is finding an error in your code.

Me: I know, can you fix it?

TA #1: You see the red  error message? Something is wrong with your code.

Me: Thanks for all your amazing help!!

TA #2: Do you need help?

Me: Yeah, should the  red or green LED be blinking in this circuit?

TA #2: Exactly.

Me: So red or green?

TA #2: Yes, Exactly.

Me: Red?

TA #2: Exactly.

Me: …and not the green?

TA #2: Yes, the green. Exactly.

Me: Great,  totally makes sense now!

#2: PROFESSORS ARE ALSO HELPFUL:

–What we learn from our biology professor:

“Baby pythons are soooo cute! But then they grow and they are not so cute! Because they can be so big they kill you!”

–What we learn from our computer  science professor:

“German literature won’t be on your  midterm.” (The only logical statement that ever escaped him.)

–What we learn from our math professor:

“Putting your feet on chairs is literally the most disrespectful act ever *gasp* how could you!”

“un-stapling your exam booklet deserves points  off. Duh.

So I hope you can see why I’ve been MIA for a bit, I’ve been busy learning all the useful things.

Kidding, this semester was  disgusting.

Peace out and good  riddance, freshman year.

On a much, much brighter note, I present to you something much happier. I tried to make ginger chocolate but they turned into triple chocolate.

Figures.

And honestly? Nobody’s loss. These are straight from heaven.

Triple Chocolate Cookies

Makes 40 mini cookies

Ingredients: 

Cookie dough:

1 cup creamy almond butter

1 egg, beaten

1/2 cup coconut sugar

1/4 cup maple syrup

1/4 cup cacao powder

1/2 teaspoon baking soda

1/4 cup chopped dark chocolate (I used 100%)

1/2 teaspoon vanilla

1/4 teaspoon salt

Buttercream:

1/2 cup room temperature unsalted butter (or use salted butter and omit the added salt below)

2 Tablespoons + 2 teaspoons maple syrup

2 Tablespoons cacao powder

1/2 teaspoon vanilla

1/4 teaspoon salt

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine all Cookie Dough ingredients in a large bowl and mix until a sticky dough forms. Dough should begin to form a sticky ball and disattach slightly from bowl.
  3. Roll dough (easiest with very damp hands) into 3/4in – 1in balls and lay onto parchment-lined baking sheet, about 1in apart.
  4. Bake for 15 mins
  5. Cool completely.
  6. While cookies are cooling, whip butter with a standing or hand mixer and slowly add in  the  other Buttercream ingredients until smooth.
  7. Pipe buttercream onto cooled cookies (whatever design you want!)
  8. Serve immediately or refrigerate for  up to 4-5 days (they won’t last that long. 😀 )
